Dumpling Soup Recipe for the Soul

Prep Time: 45 minutes | Cook Time: 30 minutes | Servings: 4

Directions:

  1. In a bowl, combine dumpling filling ingredients and mix well.
  2. To prepare dumplings, add a teaspoon of dumpling filling onto the centre of the dumpling skin.
  3. Rub the edges of dumpling skin with water to ensure they stick when folded.
  4. Fold dumpling skin in half.
  5. Repeat until you are out of chicken fillings. Alternatively, you can also freeze excess chicken fillings to use at a later time.
  6. Heat cooking oil in a pot over medium heat.
  7. Add ginger and leek. Stir fry until fragrant.
  8. Add water and chicken stock cube. 
  9. Switch to high heat and stir until chicken stock fully dissolves. Bring to boil.
  10. Add more water, bring to boil and turn down to medium heat before adding the dumplings.
  11. Add the sawi. Let cook for 10 – 15 minutes.
  12. Bring to a gentle boil.
  13. Season with salt and white pepper. Mix well.
  14. Add Chinese celery leaves and fried shallots.
  15. Turn off the heat and serve.
